Pina Colada Punch

9 cups cold milk
1 quart vanilla ice cream softened
4-6 ounce cans frozen concentrated pineapple juice.
1 cup plus 2 Tbls cream of coconut
1 Tbls rum extract or 1 cup plus 2 Tbls light rum.

Place all ingredients in large chilled punch bowl.  Beat with mixer until smooth.


Note:  To keep punch cold, freeze milk in ice cube trays. Garnish with frozen pineapple slices and cherries.

Holiday Wassail

4 cups apple cider or juice
1 cup water
4 Lipton Flo Thru Tea Bags
1 cup cranberry juice
2 Tbls fresh Lemon juice
1/3 cup brown sugar
3 whole Allspice
3 whole cloves
1 cinnamon stick, broken
1/8 tsp nutmeg
Apple rings, sliced

In large saucepan, bring cider and water to a boil.  Add teabags; cover and brew 5 minutes.  Remove tea bags.  Stir in juices, sugar and spices.  Simmer for 10 minutes stirring occasionally.  Remove spices.  Garnish with Sliced apple rings.

Hot Chocolate Mix

2 lb. Nestle Quick
8 qt. Powered Milk - Carnation
16 oz. Coffee Mate - Creamola
3/4 cup powdered sugar
 
Add 1/4 cup mixture to cup of water
Marshmallows Optional [I like to use the miniature marshmallows]
 
This is great to make a big batch for home to enjoy through the winter or when you have family gatherings.  All you would need is a canister of mix and a coffee urn filled with hot water ... a big platter of cookies and a room full of teens.

Strawberry Tea

4-6 tea bags
1 ½ cups of sugar or substitute
1 ½ quart cold water

1 ½ cups fresh strawberries
¼ cup water

Place tea bags and sugar in boiled water. Steep 5 minutes and remove bags.

In covered blender combine strawberries until smooth. Stir tea and berries mixture and chill.

Add other fruits (lime or lemon juice) if desired. Make the night before and store in freezer for next day.Cool and refreshing on a hot day. Very good served in a martini glass while still slush with a garnish of mint sprig.

Strawberry Margaritas

1 large can (12 ounces) frozen limeade concentrate
1-1/2 cups cold water
1/3 cup sugar
1 package (16 ounces) frozen whole strawberries
1 cup ice cubes

In a large blender, combine all the ingredients. Blend until well mixed and thick. Pour into margarita glasses or tall glasses and serve immediately.

For adults only:  add 1/4 to 1/3 cup tequila before blending. (Rum works, too.)

Berry Lemonade

3 lemons
4 tbsp sugar
40-50 ripe strawberries
4 cups water

Throw all ingredients into a blender (use whole lemons) and mix at high speed until frothy and smooth. Use a strainer to strain out lemon peel and strawberry seeds. Serve over ice

Chocolate Nog

Stir 1/2 cup chocolate syrup into 1 quart chilled eggnog.  Top with whipped cream and shaved chocolate.

Healthy Smoothie


1 Mango, peeled, seeded and cut into chunks
1 Banana peeled and chopped
1 cup fresh orange juice
1 cup vanilla non fat yogurt

Place all in blender, blend until smooth and then enjoy.

Spicy Mulled Cider

3 cups sweet apple cider
4 whole star anise pods
1/2 tsp whole allspice berries
1 tsp whole cloves
1 3 inche Ceylon cinnamon stick
4 white cardamom pods, cracked
2 slices of orange, quartered
2 slices of lemon, quartered

Combine all ingredients in sauce panover medium heat and bring to a low simmer.  Lower the heat and continue to simmer gently for 30 minutes.  Ladle into mugs and serve steaming hot.

Caribbean Passion

4oz. Pineapple Juice
4 oz. Orange Juice
4 oz. Grape fruit Juice
Dash of Sour Mix
Dash of Non Alcoholic Grenadine Soda

Shake all ingredients together, except the soda with ice. Strain in to a goblet and top with soda.

Sangria

1 12 oz container frozen limeade concentrate, thawed
1 12 oz container frozen lemonade concentrate, thawed
1 12 oz container frozen cranberry juice cocktail concentrate, thawed
8 cups Burgundy or other dry red wine.
1 liter ginger ale, chilled
32 maraschino cherries
2 limes, washed and thinly sliced
1 orange, washed and thinly sliced
Ice cubes

In a punch bowl, combine the fruit juice concentrates and wine; stir until well combined, just before serving, add the gingerale, fruit and ice.

Rich Vanilla Coffee Mix

1/3 cup instant coffee
1 cup instant dry milk powder
1/2 cup powdered coffee creamer
1/3 cup sugar
1/4 cup store-bought instant vanilla pudding mix.


Measure all of the ingredients into a clean, dry bowl. Use a fork to combine everything evenly. If you are ambitious, you can powder everything in a blender.  You do get really impressive results from it, and it is easier to do than one would expect. Transfer the mixture to a resealable container, or a pretty jar. This makes a good gift, especially in the winter time.

To Prepare: Place 1/4 cup of dry Rich Vanilla Cafe mix into a coffee cup. Add hot water to fill up the cup (about 3/4 cup hot water). Stir and serve.

Cafe Vienna Coffee Mix

5th Avenue Tea

3 1/2 quarts of water
3/8 cup Instant Tea
1/2 cup Lemonade Mix
1 1/4 cups sugar
2-3 cups favorite juice

Add tea, lemonade mix and sugar to water.  Stir.  Add enough juice to make the mixture come to one gallon.  Stir and refrigerate.    I have used white grape juice, apple juice, orange juice......all worked well.
