Banana Split Brownie Pizza

1 pkg. cream cheese
1 cup crushed pineapple
2 cup strawberrys (1cup chopped, the other sliced)
1 banana, sliced
½ c. chopped nuts
chocolate syrup
caramel sauce

Make brownie mix as directed on the box.  Place parchment paper onto pizza pan and bake for about 12 min.  (It will spread no further than the paper). 

Drain pineapple.  Mix ½ tsp. surgar with softened cream cheese and mix in pineapple, and 1 cup chopped strawberrys (best if this is done overnight, flavor sets in better). Spread over cooled brownie. 

Slice strawberrys and bananas and place onto the cream cheese mixture.  Drizzle chocolate and caramel sauce over top and sprinkle with nuts.

Cranberry Chiffon Pie


Crust:
1 cup all-purpose flour
2 tablespoons white sugar
1/2 cup cold butter
1/2 cup walnuts, finely chopped

Filling:
1 (3 ounce) package cranberry or strawberry gelatin
1/2 cup boiling water
1 cup whole berry cranberry sauce
3/4 cup cranberry juice
1 tablespoon grated orange peel
1 cup whipping cream, whipped

Preheat oven to 375 degrees.
In a bowl, combine the flour and sugar.  Cut in butter until crumbly.  Stir in walnuts.  Press onto the bottom and up the sides of a greased 10-inch pie plate.  Bake for 14-16 minutes or until set and edges are lightly browned.  Cool on a wire rack.

For filling, in a bowl, dissolve gelatin in boiling water.  Stir in cranberry sauce, cranberry juice and orange peel.  Cover and refrigerate until slightly thickened, about 1 hour.

 Fold in whipped cream, pour into crust.  Refrigerate for at least 3 hours.

Apple Strudel
 
1 sheet (from a 1.25-ounce pkg) frozen puff pastry, thawed
1/3 cup sugar
2 teaspoons ground cinnamon
1 (20-ounce) can sliced apples, drained
1/3 cup raisins
1 egg, beaten
 
Preheat the oven to 400. Place the pastry on a cookie sheet and unfold. In a medium bowl, combine the sugar and cinnamon; mix well.
Reserve 2 teaspoons of the sugar mixture. Add the apples and raisins to the remaining mixture; mix well. Let sit for about 2 minutes; drain off any excess liquid.  Spoon the mixture down the center of the dough. Cut slits in the dough 1 inch apart lengthwise down each side of the filling. Brush each 1-inch dough strip with the beaten egg and fold over the dough.

Brush the top of the pastry with the remaining egg and sprinkle with the reserved sugar mixture. Bake for 20 to 25 minutes, or until golden. Serve warm, or allow to cool before serving.

Creme Brulee

2 cups heavy cream
1/2 cup milk
1 cup sugar, divided
6 egg yolks
1 tablespoon Amarulla or other liqueur

In a large saucepan, combine the heavy cream, milk, 1/2 cup sugar, the egg yolks, and liqueur over medium heat and cook for 30 minutes, stirring frequently; be careful not to boil.  Remove from the heat and beat for 5 to 6 minutes, or until smooth and thick. Pour equally into four 1-cup custard cups. Chill for 4 to 6 hours, or until the custard is very firm.  In a medium skillet, melt the remaining 1/2 cup sugar over medium heat until golden then pour over the chilled custards; chill for 15 to 20 minutes, or until the sugar hardens. Serve, or keep chilled until ready to serve.

Apple Gingerbread Cobbler

1 14-ounce package gingerbread mix, divided
¾ cups water
¼ cup brown sugar
½ cup butter, divided
½ cup pecans, chopped
2 21-ounce cans apple pie filling
vanilla ice cream (optional)

Stir together 2 cups gingerbread mix and ¾ cups water until smooth.
Set mixture aside.  Stir together the remaining gingerbread mix and brown sugar. Cut in ¼ cup butter until mixture is crumbly. Stir in chopped pecans. Set mixture aside.  Combine apple pie filling and remaining ¼ cup butter in a saucepan and cook, stirring often, 5 minutes over medium heat or until thoroughly heated. Spoon hot apple mixture evenly into a lightly greased 11 x 7 inch baking dish. Spoon gingerbread mixture evenly over hot apple pie filling mixture. Sprinkle evenly with pecan and brown sugar mixture.   Bake at 375 for 30-35 minutes or until set.  Serve with vanilla ice cream.

Black Walnut Pie

1 cup sugar
1/2 stick melted margarine
1/4 cup corn syrup
3 beaten eggs
1 cup chopped black walnuts
1 tsp vanilla
1 unbaked pie shell

Preheat oven to 250.  Combine all ingredients and pour into an unbaked pie shell. Bake about 40 minutes or until set.

Bananas Foster Crepes

1 package (4-serving size) vanilla instant pudding
1-1/2 cups milk
6 tablespoons butter
3/4 cup light brown sugar
3 medium bananas, sliced
6 (6-inch) flour tortillas
6 tablespoons whipped topping

Preheat oven to 350. In a large bowl, combine vanilla pudding mix and milk, and whisk until mixture thickens; chill. In a large skillet, melt butter and brown sugar over medium heat, stirring occasionally until mixture is melted. Gently stir in banana slices and cook 2 minutes, or until heated through.   Meanwhile, place tortillas on baking sheet and place in oven 5 minutes.  Remove tortillas from oven and evenly divide pudding over them, placing pudding in center of each. Fold in both ends of tortillas then roll up. Place seam-side down on serving plates and spoon banana mixture over crepes. Top with whipped cream, and serve.

Fresh Apple Pie

6 medium apples, peeled, cored, and thinly sliced (Granny Smith are good)
1 cup sugar
2 teaspoons cornstarch
1 tsp cinnamon
1/2 tsp nutmeg
You may use refrigerated rolled pie crusts or make your own.

Preheat oven to 325.  Place apple slices on a rimmed baking sheet and bake 10 minutes.   Place warmed apples in a large bowl then add sugar and cornstarch, cinnamon and nutmeg; mix well. Refrigerate apple mixture 5 to 10 minutes.   Meanwhile, place 1 pie crust in a shallow 9-inch pie plate, pressing crust firmly against plate. Pour apple mixture into pie crust then place remaining pie crust over top. Trim and pinch edges together to seal. With a knife, cut four slits in top of crust.  Baste top crust with melted butter or cream.   Increase oven temperature to 400°F. Bake pie on a cookie sheet 30 to 35 minutes, or until crust is golden. Serve warm with vanilla ice cream.

Chocolate Chip Bars

1 cup (6 ounces) semisweet chocolate chips
1 cup chopped pecans
3 tablespoons light brown sugar
1 (18.25-ounce) package yellow cake mix
1/2 cup (1 stick) butter, softened
2 eggs
Preheat the oven to 350.   In a small bowl, combine the chocolate chips, pecans, and brown sugar; mix well and set aside.   In a large bowl, with an electric beater on medium speed, beat the cake mix, butter, and eggs until thoroughly combined (the mixture will be stiff).   Stir half of the chocolate chip mixture into the batter and spread over the bottom of a 9x13 greased baking dish. Sprinkle the remaining chocolate chip mixture over the batter and bake for 30 to 35 minutes, or until a wooden toothpick inserted in the center comes out clean. Allow to cool completely, then cut into bars and serve.

Fresh Strawberry Pie

5 tablespoons cornstarch
1 (3 ounce) package strawberry flavored gelatin mix
2 quarts strawberries, hulled
2 (9 inch) pie shells, baked

In a saucepan, combine water, sugar and cornstarch. Cook over medium high heat, stirring constantly, until mixture boils and thickens. Remove from heat and stir in the strawberry gelatin. Allow to cool slightly.  Arrange strawberries in the baked pie crusts with the tips pointing up. Pour gelatin mixture over, covering the berries.
Cool completely then top with real whipped topping.

4 cup peeled, chopped apples

Cream first three ingredients, beat 1 minute. Combine dry ingredients and add to creamed mixture, beat well. Fold in apples.
Heat oven to 350. Bake in greased 9 x 13 pan until toothpick inserted in center comes out clean.  Cool and serve with whipped topping.

Quick Easy Apple or Cherry Brownies

1 can of apples or cherries (not pie filling!!!!)
1 box of brownie mix

Place apples or cherries in a 8x8 cake pan and sprinkle brownie mix over them. Bake in 350 oven for 45 minutes or until done (about 30 minutes)  Serve plain or with whipped topping.

Lemon Squares

2-1/2 cups all-purpose flour, divided
1 cup butter, softened
1 cup confectioners' sugar, plus extra for topping
2 cups granulated sugar
4 eggs
1/2 cup lemon juice
1 teaspoon lemon extract.

Preheat oven to 350. In a medium bowl, combine 2 cups flour, butter, and confectioners' sugar; mix until crumbly. Press into the bottom of a 9"x13" baking dish to form and crust. Bake for 15 minutes. Meanwhile, in a large bowl with an electric beater on medium speed, beat the remaining 1/2 cup flour, granulated sugar, eggs, lemon juice, and lemon extract until well blended. Pour over the hot crust. Bake for 25 to 30 minutes, or until set. Allow to cool, then cut into squares. Dust with extra confectioners' sugar and serve.

S'More Pudding

11 whole graham crackers
1 (4-serving) package cook-and-serve chocolate pudding and pie filling, prepare according to package directions and still hot
3 cups miniature marshmallows

Preheat oven to broil.  Place 4-1/2 graham crackers in a single layer on the bottom of an 8-inch square metal baking pan. Spoon half the hot pudding over the graham crackers. Top with 1-1/2 cups marshmallows then another layer of 4-1/2 graham crackers, pressing down gently. Spoon remaining pudding on top then sprinkle with remaining marshmallows.  Place under broiler 2 to 3 minutes, or until marshmallows are golden and begin to melt. Crush remaining 2 graham crackers and sprinkle over melted marshmallows.
Allow to cool then cover and chill overnight to allow the graham crackers to soften. Cut into squares and serve.

Cream Cheese-Lemon Squares
 
1 box yellow cake mix
3 eggs
1 stick butter, melted
2 c powdered sugar
1 8-ounce package cream cheese, softened
¼ c sour cream
1 T grated lemon peel
1 tsp vanilla extract
¼ tsp fresh lemon juice

Combine cake mix, 1 egg and butter. Pour mixture into 13 x 9 x 2-inch glass baking dish. Beat together sugar, cream cheese and sour cream. Mix in remaining eggs, lemon peel, vanilla, and lemon juice. Spread cheese mixture evenly over crust. Bake at 350 for 30 minutes until topping sets. Cool in pan on rack. Refrigerate until very cold, at least 3 hours. Cut into squares.
